Turkish Stuffed Peppers

Ingredients

  • 10 bell peppers 
  • 3 medium onions 
  • 6 tbsp olive oil 
  • 1.5 cups rice 
  • 3/4 cup hot water 
  • 2 tbsp pine kernel
  • 1 tbsp currants 
  • 2 tsp salt 
  • 2 tsp mint 
  • 1 tsp granulated sugar 
  • 1 tsp black pepper 
  • 1 tsp allspice

Instructions

  1. Remove the stem parts of the bell peppers and set them aside. Remove the seeds and wash them in plenty of water. Drain the excess water and gently rub the inside of the peppers with salt. Chop the onions into pieces. Remove the stems of the currants and soak them in hot water to swell. Wash the rice in plenty of water and drain the excess water. Heat the olive oil in a pot. Add the onions and sauté until they turn pink.
  2. When the onions start to turn color, add the pine kernels and continue sautéing until the pine kernels turn a light color.
  3. Then add the washed rice, drained currants, granulated sugar, salt, and spices, and mix. Add hot water and cook over low heat until the rice absorbs the water.
  4. Fill the bell peppers with the stuffing mixture you prepared. Cover the tops of the bell peppers with the pepper stems you reserved. Place the stuffed peppers vertically in the cooking pot.
  5. Pour the mixture of olive oil and hot water that you mixed in a separate bowl over the stuffed peppers to fill about half of the peppers.
  6. Cook the stuffed dolmas in a covered pot over low heat for about 30-35 minutes until the cooking water is drained and the rice is soft. Enjoy your meal.

You can serve the stuffed peppers as a main course with a salad and tzatziki.

Expert Tips
  • The rice you will use in the filling must be cooked well. Before starting the recipe, soak the rice in warm water for a while, and then rinse it to remove the starch.
  • Marinate with black pepper, salt, and a little water. You can increase the flavor of the peppers by rubbing this mixture on the inside of the peppers before filling them.
  • To prevent the peppers from drying out after cooking, leave the lid of the pot slightly open.
  • Take care to leave some space when filling the stuffed peppers. Since the rice expands as it is cooked, you need to fill it accordingly.
  • To ensure that the stuffed peppers cook evenly, place them vertically in the pot.
  • After cooking, drizzle extra virgin olive oil over the dolmas. This will make them look more appetizing.
