One of the most popular recipes all around Turkey is 'Pişi'. It takes 10 minutes to prepare and only 15 minutes to cook. Although it is usually served plain, in different regions it can be prepared with potato, cheese, or minced meat filling. How to Make Ardahan-Style Pisi?

  • Mix flour, yeast, salt, and water to obtain a soft but firm dough.
  • Leave the dough to rest for a while. When the dough is fermented, fill a deep, large pan half full of oil and heat this oil over high heat.
  • Cut the dough into desired small slices and roll out the phyllo sheets with a rolling pin; pierce the center of the phyllo sheets for better cooking. Fry in hot oil. It is ready to serve.
    How to Make Afyon-Style Pishi?
  • Divide the dough into fist-sized pieces. These pieces are brought to the size of a plate by dipping them in oil with the fingertips.
  • You can also add black sesame to the dough. Pierce them in a few places with a fork and cook them in a deep skillet in hot oil, flipping them back and forth.
  • Serve with cheese, olives, pickles, halva, jam, and molasses.

Turkish Pişi

Ingredients

  • 3 tablespoons of yogurt
  • 1 egg
  • 1 cup warm water
  • 1 teaspoon salt
  • As much flour as it needs
  • Half a packet of baking powder

Ardahan pişi:

  • 1 kg of flour
  • Yeast
  • Salt
  • Water

Afyonkarahisar pisi:

  • 1 piece of bread dough
  • 1 cup of vegetable oil

Instructions

  1. To make yeast-free pies, first put the water, egg, and yogurt in a bowl and whisk them.
  2. Then gradually add salt, baking powder, and sifted flour and knead the dough until it reaches a consistency that will not stick to your hands.
  3. Divide the dough into two pieces and roll them out with a rolling pin. The dough should be neither too thin nor too thick.
  4. Cut the dough into squares with the help of a knife.
  5. Pour sunflower oil into the frying pan, and when the oil starts to heat, add the dough to it.
  6. After one side is fully cooked, flip to the other side and fry. Put the fried dough on a serving plate. Enjoy your meal.
Expert Tips
  • Yeast can optionally be used in making pisi. If you want to make a yeast-free pisi, you can prepare your dough with eggs, yogurt, and baking powder.
  • To make the dough fluffy, add 1 teaspoon of baking soda in addition to the baking powder.
  • When shaping the dough, you can form circles with the edges of a glass.
  • For the cheese pisi, roll out the dough thin and long and fill the center with curd cheese. Then close the edges and bake in hot oil.
  • Always keep the fried dough on a paper towel. In this way, you can drain the excess oil.
