Turkish Delight

Ingredients

  • 3 cups white sugar
  • 3 cups of water
  • 1 cup starch
  • 1 g lemon salt
  • 1 cup lemon juice
  • 1 teaspoon cream of tartar

For the topping:

  • 4 tablespoons castor sugar
  • 1 tbsp starch

Instructions

  1. Add sugar, water, and lemon salt to a large pot, mix, and let it boil.
  2. Add the starch and lemon juice to a deep mixing bowl and mix until the starch dissolves.
  3. Add the starchy mixture to the boiling syrup and stir constantly with the help of a whisk.
  4. Keep stirring the mixture over low heat until it starts to boil and thickens.
  5. Continue to cook the Turkish delight mixture, which starts to thicken as it boils, for about 45 minutes, stirring constantly.
  6. Before taking the completely thickened and yellow-colored Turkish delight into a square pan, wet the pan a little and pour the Turkish delight into it.
  7. Stretch the Turkish delight when it comes to room temperature and keep it in the refrigerator overnight.
  8. Cut the Turkish delight that you have kept overnight into the sizes you want.
  9. Mix the powdered sugar and starch in a bowl, pour some of them over the Turkish delight, and take the Turkish delight out of the pan.
  10. Cover the Turkish delight with the remaining powdered sugar mixture.
  11. Your Turkish delights are ready to be served. Bon appetit.

Expert Tips
  • Cream tartar makes the marshmallow firmer and thicker. If you do not use cream tartar, your Turkish delight will have a softer consistency.
  • Before pouring the Turkish delight into the square pan, make sure to wet the floor of the pipe a little so that it does not stick.
  • You can also add pistachios or walnut pieces to the Turkish delight.
  • You can also use other aromas, such as rosewater, instead of lemon juice.
