Stuffed Mussels (Midye Dolma)

Ingredients

  • juice of 1 lemon
  • 50 shelled mussels
  • 1 cup olive oil

For the seasoned rice:

  • 2 cups rice
  • 6 onions
  • 2 tbsp pine kernel
  • 3 tbsp currants
  • 4 sugar cubes
  • juice of 1 lemon
  • 130 ml olive oil
  • 4 cups of hot water
  • 2 tsp allspice
  • 2 tsp black pepper
  • 1 bunch of dill
  • 2 tsp salt

Instructions

  1. First, scrub and clean the top of the mussels. Without separating the shells, open the ends of the mussels with the tip of a knife.
  2. Remove the feathery parts with your hands, and soak the shells in a bowl of water for 15 minutes. Drain, wash, and set aside.
  3. Soak the rice in warm, salted water for 20 minutes. Then drain and wash with plenty of water. Clean and finely chop the onions.
  4. Sift and wash the currants, soak them in warm water, and drain. Put the pine kernels in a frying pan and roast them until they turn yellow.
  5. Heat 1 cup of olive oil in a pot. Add the onion and fry it. Add the rice and roast over low heat for 10 minutes, stirring from bottom to top.
  6. Add the pine kernels and currants, and stir. Add 2 cups of hot water, lemon juice, salt, black pepper, allspice, and sugar, and continue stirring.
  7. Cook on low heat so that the rice stays solid. Add the chopped dill, take it off the stove, and rest it for 20 minutes.
  8. Take one of the mussels and fill it with a tablespoon of rice. Put the shells on each other and close them. Fill the others in the same way.
  9. Place the mussels in a pot with the larger side down. Drizzle olive oil over them and add 3 cups of hot water. Then cover it with a porcelain plate.
  10. Cook over low heat for 25 minutes. Add lemon juice to the cooked stuffed mussels and place them on a serving plate. Enjoy your meal.
