Simit (Turkish Sesame Bread Rings)

Ingredients

  • 1 kg flour
  • 1 small size of fresh yeast (30gr)
  • 3 cups of warm water
  • 1 tbsp salt
  • 3 tbsp molasses
  • 1 cup sesame seeds

Instructions

  1. Dissolve the yeast in a glass of warm water. Leave it for 2–3 hours for it to rise.
  2. Mix 1 cup of warm water with 2 spoons of molasses.
  3. Put the flour into the dough-kneading bowl.
  4. Open the center like a pond and add the dissolved yeast and salt. Add the molasses water little by little and knead the dough until it becomes smooth.
  5. Pick pieces from the dough and shape them into larger and skinny bagels by rolling them with your hands. In a deep bowl, mix the remaining 1 glass of water with 1 spoon of molasses.
  6. Spread the sesame seeds on a large plate. Dip the dough into the molasses water, take them out, and coat them with sesame seeds.
  7. Lightly butter the baking tray and arrange the bagels on the tray, spaced apart.
  8. Bake in a preheated 200-degree oven for about 30 minutes. Serve hot with tea and feta cheese.
