Ingredients

  • 8 medium-sized eggplants
  • 4 onions
  • 12 cloves of garlic
  • 3 tomatoes
  • 4 green peppers
  • 95 ml olive oil
  • Salt
  • Black Pepper
  • 2 sugar cubes
  • 2 cups of hot water

For tomato sauce:

  • 3 tbsp olive oil
  • Half a glass of grated tomato
  • 1 tsp tomato paste

For frying:

  • Sunflower oil

For the top:

  • Parsley leaves

Instructions

  1. Peel and chop the onions. Remove the garlic cloves. Peel the tomatoes and cut them into cubes. Remove the seeds of the peppers, cut them in half, and chop them into thin slices.
  2. Heat the olive oil in a pan. Add onions and salt, and sauté. Add garlic, tomatoes, peppers, sugar, and black pepper. Cook for 10 minutes on low heat.
  3. Heat the sunflower oil in a pan. Lightly fry the eggplants on both sides in the heated oil. Remove the fried eggplants on a paper towel and drain the excess oil.
  4. Place the eggplants in a large pot, spaced apart. Slightly cut open the middle parts with a knife and distribute the onion mixture.
  5. Add 2 cups of hot water from the side of the pot. Cover the pan lid and cook on low heat for 20 minutes until the water is absorbed.
  6. To prepare the tomato sauce, heat the olive oil in a pan. Add grated tomatoes and tomato paste and bring to a boil.
  7. Put the sauce on a serving plate. Place the eggplants on it, and sprinkle finely chopped parsley on top. Serve cold. Enjoy your meal.
