Fellah Kofta With Yogurt Cream

Ingredients

For meatballs:

  • 2 cups of fine bulgur
  • 2 cups of hot water
  • 1 onion
  • 1 cup of semolina
  • 1 egg
  • 1 tbsp. tomato paste
  • 3~4 tbsp. flour
  • Salt
  • Black Pepper
  • Cumin
  • 1/4 cup of water

For the sauce:

  • 2 cloves of garlic
  • 1 cup of olive oil
  • 2 tbsp. chili paste
  • 1 tbsp. tomato paste
  • Salt
  • Black Pepper
  • 1 bunch of parsley

For the top:

  • Half a cup of strained yogurt
  • 2 cloves of garlic
Fellah Kofta With Yogurt Cream

Instructions

  1. Put the fine bulgur in a bowl. Add hot water to it and leave it to infuse for 4 minutes. Meanwhile, grate the onions.
  2. Add the grated onion and the remaining ingredients to the bulgur. Knead until all the ingredients are well blended.
  3. Pick hazelnut-sized pieces from the mixture and roll them. Press the middle of the meatballs with your finger, shape them into buttons, and spread them on a tray sprinkled with flour.
  4. To prepare the sauce, fry the crushed garlic cloves and tomato paste in olive oil. Once the tomato paste is fragrant, remove it from the stove, add half of the finely chopped parsley, and mix. Put the sauce in a large bowl. 
  5. Boil the meatballs in salted, boiling water. When the meatballs start to float on the water, drain them with the help of a colander and put them into the sauce bowl.
  6. Blend so that all the meatballs are covered with sauce, and put the meatballs with sauce on a serving plate.
  7. Slightly whisk the yogurt with the crushed garlic. Serve after pouring yogurt sauce on top of the meatballs. Bon appetite!
