Creamy Pesto Gnocchi

Ingredients

  • 500 g potato
  • 200 g flour
  • 1 egg
  • 1 teaspoon salt

For the sauce:

  • 2 cups of fresh basil
  • Half a glass of powdered parmesan
  • 1 tablespoon of pine nuts
  • 1 clove of garlic
  • 1/3 cup olive oil
  • Salt
  • Black Pepper

Instructions

  1. Boil the potatoes in plenty of water, peel them, and mash them until you get a smooth consistency.
  2. Make a well in the center of the potatoes and sprinkle flour on it.
  3. Add the egg, salt, and remaining flour, and mix with a spatula from the edges towards the center.
  4. When all the ingredients start to combine well, knead the dough by hand for 4-5 minutes. Divide the dough into two meringues.
  5. Roll out the first meringue into a 2-cm-thick roll. Cut 2 cm-wide pieces with the help of a knife.
  6. Roll the small pieces you cut with the back of a fork to give the original gnocchi shape.
  7. Repeat the same process for the second meringue.
  8. Boil the gnocchi and place them in a large baking dish.
  9. For the sauce, blend all the ingredients until you get a smooth consistency.
  10. Pour the sauce over the gnocchi in the oven dish and mix without crushing them.
