Ingredients

For the filling:

  • 1 tablespoon unsalted butter
  • 1 chicken breast
  • 200 g ricotta cheese
  • 50 g parmesan cheese
  • 1 large egg
  • 1 large egg yolk
  • 1 pinch of grated nutmeg
  • 1 pinch of lemon zest, optional
  • Salt and pepper

For pasta:

  • 280 g of flour
  • 3 eggs
  • 1 pinch of salt

Instructions

  1. Start this recipe by making pasta dough. Bring all the ingredients for the pasta together and start kneading. Set aside the kneaded dough.
  2. For the filling, put the butter in a pot and sauté the chicken. Cut it into small pieces and leave it to cool.
  3. Blend the chicken, ricotta, parmesan, egg, egg yolk, nutmeg, lemon zest, salt, and lemon into a paste.
  4. Divide the pasta dough in half, and then roll it out. Cut rounds from the rolled-out dough and fill them with the filling.
  5. First, close them into a half-moon shape and connect the two ends.
  6. Boil salted water in a pot, put the pasta in the boiling water, and cook for 5 minutes. Enjoy your meal.
