A specialty of the Southeast, particularly Urfa, cig kofte is a dish made primarily with bulgur. There are two varieties: meatless and meat-based. To make things simpler and cheaper, we are now preparing raw meatballs without meat at home.

  1. Put the isot, red pepper flakes, olive oil, and pomegranate molasses in a bowl. Add 1/4 cup of cold water and mix.
  2. Prepare the green parts of the green onion and parsley by chopping them very finely.
  3. Chop the onion and garlic very thinly. Put the chopped onion and garlic, tomato paste, and spices into the kneading bowl. Put the bulgur on one side.
  4. First, knead all ingredients except bulgur and prepare a smooth mixture. Then add the bulgur little by little and start kneading. Add ice water in between and knead until the bulgur is soft. By the way, you can also add tomato sauce instead of water; it will add flavor to the meatballs. Add the hot sauce to the meatballs and knead for a few more minutes.
  5. Finally, add the greens and mix to get them all evenly mixed with the meatballs.

You can serve the cıgköfte and ayran with mints together. Enjoy your meal.

  • Seasoning for raw meatballs is a very tasty mixture of freshly ground spices ranging from chili pepper to ginger, cloves to cumin.   • If you are not used to spicy food, the amounts may be too much. You can adjust the amount of tomato paste, red pepper flakes, and isot according to your taste.
  • The reason why raw meatballs are not kneaded too much is that the food processor serves this function.
  • You can decrease or increase the amount of garlic and tomato paste according to your taste.
  • If you don't have a food processor, blend the ingredients except bulgur. Then add the bulgur and knead.
  • You can serve the raw meatballs with lettuce, lemon slices and pomegranate syrup.
