Ingredients

  • 500 g beef tripe (cleaned)
  • 1 onion
  • 2 carrots
  • 2 celery stalks
  • 2 cloves of garlic
  • 1 cup of broth or water
  • 1 cup grated tomato
  • 2 tablespoons of olive oil
  • Salt
  • Black Pepper
  • Rosemary or fresh thyme

Instructions

  1. After cleaning the tripe, cut it into small pieces.
  2. Put the olive oil in a pot and heat it. Add the chopped onion and fry.
  3. Then add grated garlic and stir until it starts to smell.
  4. Add the chopped carrot and celery stalk. Saute until the vegetables soften.
  5. Add the tripe and cook over low heat until the color changes.
  6. Stir in the broth and spices.
  7. Close the lid of the pot. Cook over low heat for 1.5–2 hours.
  8. Serve hot when the cooking time is done. Enjoy your meal.
