Tomato Jam

Ingredients

  • 1 kg Roma tomatoes (long-pointed tomatoes with very few seeds)
  • Half a cup of brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp grated fresh ginger 
  • 1 tsp pepper flakes
  • 1 tsp paprika

Instructions

  1. In a deep saucepan, add the tomatoes, sugar, vinegar, ginger, salt, red pepper flakes, and paprika. Bring the mixture to a boil over medium-high heat, stirring occasionally with a spatula or wooden spoon.
  2. Once it starts to boil, reduce the heat to medium and simmer for about 2 hours, stirring occasionally. Cook until the mixture thickens.
  3. Divide the jam into two separate jars and allow it to cool.
  4. Then seal the jars tightly and store them in the refrigerator for up to 2 weeks. Bon appetit!
