Strawberry Parfait

Ingredients

  • 300 ml cream
  • 5 mini-meringues
  • 2 tablespoons of powdered sugar
  • 200 mL of strained yogurt
  • 200 g chopped strawberries
  • 2 tablespoons of lemon juice

For the sauce:

  • 300 g strawberries
  • 2 tablespoons of powdered sugar
  • 1 tablespoon of lemon juice

For the top:

  • Mint leaves
Strawberry Parfait

Instructions

  1. Line the inside of the crème caramel molds with cling film.
  2. Whisk together the cream, lemon juice, powdered sugar, and yogurt.
  3. Cut the meringues into small pieces and add them to the mixture with the strawberries.
  4. Divide the mixture into the molds and put them in the freezer for 2.5 hours.
  5. For the sauce, mix the strawberries, lemon juice, and powdered sugar with a mixer. Strain the sauce through a sieve to get a smooth consistency.
  6. Invert the parfait onto a serving plate and remove the film. Pour the sauce around it. Garnish with mint leaves, and serve.
