Spring Orzotto

Ingredients

  • 2 tbsp olive oil
  • 2 finely chopped shallots
  • 3 cloves of garlic
  • 2 tsp kosher salt
  • 1 pack of orzo rice
  • 5 cups of water
  • Fresh black pepper
  • 175 g thinly sliced peas
  • 1/2 cup frozen peas
  • 2 boiled asparagus (optional)
  • 30 g grated parmesan cheese
  • 4 tbsp butter
  • 3 tbsp lemon juice
  • 1/2 cup pesto sauce

Instructions

  1. Put the olive oil in a large pot and heat it. Add chopped shallots and stir for 3–4 minutes.
  2. Add the garlic and salt, and continue stirring.
  3. Then add the orzo rice and stir until it turns golden.
  4. Add the wine vinegar and salt. Season with black pepper. Cook for 2 minutes.
  5. Add 5 cups of water to the orzo rice and cook. Stir frequently during cooking. Continue cooking for about 15 minutes.
  6. Cook the thinly sliced peas and frozen peas in another pot until softened.
  7. When the orzo rice is cooked, add the parmesan cheese, butter, and lemon juice and stir until melted.
  8. Add the cooked peas and asparagus on top. Portion the orzo into the serving bowls. Serve with pesto sauce on top. Enjoy your meal.
