Known as ravioli in Italy and gyoza in the Far East, the Russian equivalent of ravioli is pelmeni. Pelmeni, which is categorized as dessert and salty, is prepared with fruit sauce and sugar if it is to be served as a dessert. For salty, it is served plain, with minced meat or cheese. Russian Pelmeni

Ingredients

  • 1 cup warm water
  • 2 eggs
  • Salt
  • 4.5 cups flour

For the filling:

  • 200 g minced meat
  • 1 onion
  • 1 tbsp olive oil
  • Cumin
  • Black Pepper
  • Salt

For the top:

  • 200 g butter
  • Chopped dill
  • 4 tbsp sour cream

Instructions

  1. Take the milk and water into the bowl where you will knead the dough, add the eggs, and mix well. Add salt.
  2. Knead the dough by adding as much flour as you can, little by little. Divide the dough into pieces.
  3. Cover it with a plastic bag or a cloth and let it rest for at least 30 minutes. Meanwhile, to prepare the filling, add grated onion to the minced meat.
  4. Add cumin, black pepper, and salt, and mix. Roll out each of the meringues with a rolling pin on a floured countertop so that it is thicker than ready-made phyllo dough.
  5. For the dough to roll out easily, sprinkle a little flour on it frequently. Cut the dough into pieces using a glass cup or round-shaped plate, and fill them with the minced meat mixture.
  6. Close them in a half-moon shape, seal the edges, and join the ends towards the bottom.
  7. Add a little salt to the boiling water and boil the pelmenis until soft.
  8. Drain the water. Melt the butter in a large saucepan or skillet. Add the drained pelmenis to the butter and sauté for a few minutes.
  9. Place on serving plates, and serve with sour cream and chopped dill. Enjoy your meal.
Expert Tips
  • The dough you knead should be neither too hard nor too soft. It should be reminiscent of dumpling dough, but you should get a very elastic dough.
  • When adding flour, you should add it in a stepwise manner and control the consistency of the dough.
  • The counter on which you will roll out your dough should be stable and have a hard surface.
  • You can sprinkle flour on the dough to make it easier to roll out.
  • If you cut your dough with the edge of a glass cup, the size will be ideal.
  • If you don't want to serve your pelmenis with sour cream, you can serve them with garlic yogurt and red pepper oil, like Turkish manti.
  • You should make sure that the water in which you will cook the pelmeni pieces is boiled. Otherwise, your pelmeni pieces will break apart.
  • When rolling out the dough, you should make sure that it is of medium thickness.
  • If you add some beef bouillon to the water you boil, the flavor will increase even more.
