Ingredients

  • 500 g mushrooms
  • 100 ml olive oil
  • 6 slices of sourdough bread
  • 120 g Parmesan powder
  • 1 cup baby spinach
  • 4-5 bunches of arugula
  • Salt, black pepper
  • 1 clove of garlic
  • Fresh thyme

Instructions

  1. First, peel the mushrooms and cut them into quarters.
  2. Add oil to a deep skillet and start sautéing the mushrooms and then the spinach.
  3. Set aside the sauteed vegetables.
  4. Oil the sourdough bread and rub a clove of garlic on the bread for the garlic aroma.
  5. Fry the slices of bread by turning them a few times in the pan. Add parmesan powder and let the cheese melt over low heat with the lid closed.
  6. Put the bread on a plate, add the arugula leaves, and add the mushrooms and spinach that you sautéed.
  7. The mushroom sandwich is ready; finally, sprinkle fresh thyme on it.
  8. If you wish, you can serve it with bread on top, or you can serve it as an open sandwich. Enjoy your meal.
