Potato Vareniki

Ingredients

  • 280 gr. flour 
  • 2 eggs, beaten 
  • 120 g milk, warm 
  • 2 tablespoons of vegetable oil 
  • 1 teaspoon salt

For the Batter:

  • 400 gr. potato
  • 2 onions
  • 100 g milk, hot 
  • 4 tablespoons of butter 
  • 2 tablespoons of vegetable oil 

For serving:

  • 2 sprigs of green onion, chopped
  • 1 onion
  • 1 tablespoon powdered sugar 
  • Salt 
  • Black Pepper

Instructions

  1. Knead all the ingredients for the dough together. Leave the dough aside to rest. 
  2. Boil the potatoes in salted water for the filling. 
  3. Mash the boiled potatoes with milk; add salt and black pepper for flavor. 
  4. Put the oil in a pan and fry the onion until it turns color. 
  5. Add the roasted onion to the potato mixture and let the mixture cool. 
  6. Roll out the rested dough and cut rings. Put the filling inside and close them. 
  7. Cook them in boiling water. 
  8. For serving, fry the onion with powdered sugar. 
  9. Sprinkle onions and green onions on the boiled ones and serve.
  10. Enjoy your meal.
