Ingredients

  • 2 onions
  • 5 cloves of garlic
  • 5 tbsp olive oil
  • 2 tomatoes
  • 3 baby octopuses
  • 1.5 cups short-grain white rice
  • 1 tsp saffron
  • 100 mL of red wine (optional)
  • 3 cups hot chicken broth (or veggie broth)
  • Salt
  • Black Pepper
  • 4 prawns (200 grams)
  • 200 g squid
  • 12 mussels in shell (200 grams)
  • 1 cup peas
  • Parsley

Instructions

  1. First, chop the onions into small pieces.
  2. After crushing the garlic, mince it finely. After peeling the tomatoes, cut them into cubes.
  3. Clean all seafood carefully. Then rinse with plenty of water.
  4. Use paper towels to dry the washed seafood.
  5. Put the chicken or vegetable broth in a pot and cook over low heat.
  6. Heat the olive oil in a wide-based skillet. Add the onion and garlic and roast them.
  7. After washing and draining the rice, add it to the pan and add the chopped tomatoes.
  8. Add the saffron and red wine, and cook over high heat.
  9. Add half of the hot vegetable broth to the rice. Season with salt and pepper, close the lid and let it cook.
  10. Heat the olive oil in a different pan. Add all the seafood and sauté them one by one over high heat.
  11. Put the seafood into the rice pot. Add the remaining vegetable stock and peas, and cook until the water is absorbed.
  12. Serve the seafood paella with finely chopped parsley and mint leaves. Enjoy your meal.
