Orange Parfait

Ingredients

  • 3 egg yolks
  • 1 tablespoon of lemon juice
  • 75 g sugar
  • 1 vanilla pod
  • 140 ml of orange juice
  • 250 ml of whipped cream
  • 4 oranges

For serving:

  • Fresh mint

Instructions

  1. Carefully peel the white parts of the oranges.
  2. Whisk the egg yolks, lemon, and sugar in a bowl. Add the vanilla seeds and continue whisking.
  3. When the egg yolks start to turn white, gradually add the orange juice.
  4. In a separate bowl, whip the cream until stiff. Gradually fold in the whipped cream and egg yolks.
  5. Add the remaining orange slices on top, and freeze for 4 hours.
  6. Garnish with fresh mint, and serve. Enjoy!
