Ingredients

  • 500 g of haddock 
  • 2 bay leaves 
  • 1 cup basmati rice
  • 4 eggs
  • 1 cup of frozen peas
  • 2 tbsp. butter
  • 1 tbsp sunflower seed oil
  • 1 onion
  • 1 tbsp curry
  • 1 pack of cream
  • Salt
  • Black pepper
  • Half a bunch of parsley
  • Half a lemon

Instructions

  1. Place the fillet in a wide pan.
  2. Pour half a cup of water over it, and add the bay leaves.
  3. Bring the water to a boil. Cook the fish for 10 minutes.
  4. Clean the skin of the fish and set it aside. Add basmati rice to the cooking water and boil it.
  5. Turn off the burner and allow the boiled rice to infuse.
  6. Boil water in a pot and boil the eggs for 8 minutes.
  7. Peel the boiled eggs carefully under cold water.
  8. Boil the peas in a small pot and drain.
  9. Melt the butter with the oil in a large skillet. Add the finely chopped onions to the pan and sauté until softened.
  10. Add curry powder and keep stirring.
  11. Add the cooked rice, peas, cream, finely chopped parsley, and black pepper, and mix well.
  12. Chop the fish into large pieces and add them to the pan. Squeeze the lemon juice and give it a good stir.
  13. Cut the eggs into quarters and add them to the rice. Put a lid on the pan and cook over low heat until the eggs are warmed.
  14. Kedgeree is ready to serve. Bon appetit!
Serving Suggestions
  • If you wish, you can add vegetables of your choice, such as carrots and capia peppers.
  • You can garnish it with dill and chives.
Expert Tips
  • Fish such as tuna or salmon can also be used.
  • If you are not going to serve immediately, place the Kedgeree on a warm plate, and add a few cubes of butter on top. Before serving, cover with aluminum foil and place in the oven at a low temperature for about 20 minutes.
