Jambalaya

Ingredients

  • 2 tablespoons of olive oil
  • 1 tablespoon of butter
  • 250 g shrimp
  • 150 g sausage, sliced
  • 2 tomatoes, diced
  • 1 onion, chopped
  • 2 spring onions, finely chopped
  • 1 green pepper, diced small
  • 1 potato, diced (pre-boiled)
  • 2 cloves of garlic, finely chopped
  • 1 cup of rice
  • 2 teaspoons of paprika
  • 1 teaspoon of cumin
  • 1 bay leaf
  • 1 pinch of red chili pepper
  • Salt and freshly ground black pepper
  • 1 cup of chicken broth

Instructions

  1. Put the olive oil and butter in a pot and cook the sausages for 5 minutes. Then add paprika, cumin, red pepper flakes, and onion, and fry.
  2. Add potatoes, tomatoes, peppers, green onions, bay leaf, and salt, and blend.
  3. Add rice. Mix it with all the ingredients. Add chicken broth and plain water and let it cook.
  4. About 10 minutes before it is ready, add the shrimp and mix. Enjoy your meal.
