Italian Torrone

Ingredients

  • 20x25, 2 sheets of wafer paper
  • 440 g of honey
  • 200 g sugar
  • 3 tablespoons of sugar
  • 2 egg whites
  • 1 pinch of salt
  • 5 g sugar vanillin
  • 1 tablespoon lemon zest
  • 300 g roasted almonds
  • 100 g pistachios

Instructions

  1. Start by placing baking paper in a bowl where the wafers can fit easily and placing one of the wafers on it.
  2. Pour the honey and sugar into a saucepan and cook over low heat for half an hour, stirring constantly, until smooth.
  3. Add a pinch of salt to the egg whites and whisk. Beat for about 5 minutes until they turn white.
  4. Combine the egg whites and honey mixture. Do this slowly and carefully in four batches.
  5. Continue cooking over low heat for about half an hour, stirring constantly.
  6. Stir in the vanilla, lemon zest, almonds, and pistachios.
  7. Transfer the mixture to the prepared dish, place the wafers on the top surface, and press lightly.
  8. After cooling for 3 hours, you can slice and enjoy!
Expert Tips
  • If you can't find wafers, you can do without them.
  • You can use any kind of nuts you want.
