Greek Bougatsa

Ingredients

  • 500 gr. phyllo dough
  • 200 g of melted butter

For the custard:

  • 1 cup granulated sugar
  • 1 liter of milk
  • 1 cup of flour
  • 4 eggs
  • 1 packet of vanilla

  • Cinnamon powder
  • Powdered sugar

Instructions

  1. In a deep bowl, beat the eggs with a mixer at medium speed until the mixture is frothy. Gradually add granulated sugar and whisk for about 4 minutes until thick and frothy.
  2. Add the milk to a medium saucepan and stir over medium heat until it starts to boil.
  3. With the mixer on low, slowly pour the hot milk into the egg mixture until fully mixed.
  4. Pour the milk mixture back into the pot. Stir over medium heat until boiling.
  5. Gradually add the semolina, turn the heat to the lowest setting, and stir continuously for about 1 minute until it thickens.
  6. Add the butter and stir until it is completely melted. Add the zest of the lemon and vanilla and mix well.
  7. Stir occasionally to prevent the custard from forming a thick layer on top.
  8. Grease the sides and bottom of the baking tray with a pastry brush.
  9. Arrange the phyllo sheets on the bottom one by one and brush each one with melted butter.
  10. Pour the custard on the 4th phyllo, smooth it with a spatula, and cover the edges of the phyllo over the custard.
  11. Cover with 4-5 layers of phyllo, and sprinkle each layer with melted butter. Cut off some of the extra phyllo with a knife if you wish, and close the rest around the edges.
  12. Bake the bougatsa in a preheated oven at 160 degrees for 40 minutes, until the top of the phyllo is crispy and golden.
