Fish Taco

Ingredients

  • 3 tablespoons of olive oil
  • 1 lemon juice
  • 2 teaspoons of chili powder
  • 1 teaspoon of sweet paprika powder
  • ½ teaspoon cumin
  • 600 g of any type of white fish
  • ½ tablespoon vegetable oil
  • Salt
  • Black Pepper
  • 8 tortillas

For serving:

  • Lemon wedges
  • Sour cream

For the corn salad:

  • 2 tablespoons of mayonnaise
  • juice of one lemon
  • 2 tablespoons fresh, chopped coriander
  • 1 tablespoon of honey
  • 1 cup grated red cabbage
  • 5 tablespoons of sweet corn
  • 1 jalapeno pepper, minced

Instructions

  1. In a medium bowl, combine olive oil, lemon juice, sweet chili powder, chili powder, and cumin.
  2. Add the fish, season on all sides, and marinate for 15 minutes.
  3. Meanwhile, for the salad, whisk the mayonnaise, lemon juice, cilantro, and honey in a bowl. Add the cabbage, corn, and jalapeno peppers and mix. Season with salt and pepper.
  4. Put a non-stick skillet on the stove and heat the oil. Remove the fish from the marinade and season with salt and pepper. Cook for 5 minutes on each side.
  5. Heat the tortillas. Put them together to make tacos.
  6. Serve with corn salad, fish, and avocado. Garnish with lime juice and sour cream. Enjoy your meal.
