Cilbir (Turkish Eggs)

Ingredients

  • 5 Eggs
  • 200 g yogurt
  • 1 clove of garlic
  • 50 g olive oil
  • 2 slices of sourdough bread
  • 1 tbsp grape vinegar
  • Salt
  • Black pepper
  • Chili Pepper

Instructions

  1. Fill a pot with water and start heating over medium heat. When the water starts to boil, add salt and vinegar. Crack one egg into the bowl and gently drop it into the hot water.
  2. Do the same for all the eggs, one by one. Make sure that the water does not boil. Turn off the stove after a while if you need to. Remove the cooked eggs one by one from the water with a colander, remove the excess water from the colander with a napkin, and place them on a serving plate.
  3. Heat the olive oil in a small pan; add red pepper flakes and salt. Toast the bread.
  4. Mix the yogurt, garlic, and salt in a bowl. Add the yogurt you prepared to the toasted bread.
  5. Add butter, chili pepper, and eggs to the bread.
  6. Enjoy your meal.
Expert Tips
  • Make sure the water is already boiling when you add the eggs.
  • Do not use sharp-edged materials when shaping the eggs. Otherwise, the eggs may be pierced.
  • You can also prepare breaded çılbır by adding small bread slices, or florentine çılbır with boiled spinach.
