Pate a choux, also known as profiterole and éclair dough, is a pastry often consumed in French cuisine. The prepared dough is filled with a creamy filling. Ingredients
- 1.5 cups of flour
- 1 cup of water
- 7 tbsp butter (100 grams)
- A pinch of salt
- 4 eggs

Instructions
- Put the flour, water, and butter in a saucepan and mix while the butter is melting.
- When the water boils and the butter melts, add the salt. Mash the flour with a spatula.
- When the mixture reaches the consistency of dough, keep cooking for 1 minute while crushing with a spatula.
- Spread the dough on a clean kitchen counter and let it cool.
- Set the oven to a fanless program at 190 degrees.
- Once the dough has cooled down, put it in a mixing bowl and add the eggs one by one.
- After adding all the eggs and mixing, transfer the dough into a piping bag.
- Line a baking tray with baking paper, and make a small hole at the tip of the piping bag.
- Squeeze the mixture in the bag onto the tray, about the size of a walnut.
- Get your thumb wet and rub it lightly over the dough.
- Bake in the oven for 10–12 minutes, until doubled in size. You can fill the doughs as you wish. Bon appetit.
