Chicken Quesadilla

Ingredients

  • 4 sheets of tortillas
  • 2 chicken breasts
  • 1 red pepper (julienne cut)
  • 1 yellow pepper (julienne cut)
  • 1 white onion (julienne cut)
  • 2 cups mozzarella cheese (grated)
  • 2 tbsp. olive oil
  • Salt
  • Black pepper

Instructions

  1. Preheat the oven to 220 degrees. Line the tray with baking paper.
  2. Put the olive oil in a skillet and cook the chicken breast meat over medium heat. When cool, cut into thin slices.
  3. Cook the peppers and onions in the same pan where you cooked the chicken until they turn color and soften. Season with salt and pepper. 
  4. Put mozzarella cheese on one tortilla, then the sliced chicken, peppers, and some mozzarella cheese on it, and cover it with another tortilla. (If you spread olive oil on the lavash with a pastry brush, it will be more crispy.)
  5. Prepare the remaining two tortillas in the same way. 
  6. Place the quesadillas on the tray and bake in a preheated 175-degree oven for 7-8 minutes until the cheese melts.
  7. If you wish, you can serve spicy potato chips with it. Enjoy your meal.

  • When boiling the chicken meat, make sure it is soft.
  • In addition to mozzarella cheese, you can also add cheddar and kasseri cheese.
  • You can make your meal more crispy if you use tortillas instead of lavash.
