Although it can be enriched with toppings such as sausage and salami, the original deep-dish pizza consists only of cheese and bacon. Chicago-Style Deep Dish Pizza

Ingredients

For Pizza Dough:

  • 2.5 cups of flour
  • 1 packet of instant yeast
  • 1/2 cup corn flour
  • 2 tsp. salt
  • 70 grams of butter
  • 1/2 cup of warm water
  • 2 tsp. salt
  • 1 tsp. granulated sugar
  • 20 gr. butter (for the top of the dough)
  • 2 tbsp. olive oil

For the Tomato Sauce:

  • 2 tomatoes
  • 2 tsp. butter
  • 2 cloves of garlic
  • 1 onion
  • 2 tsp. thyme
  • 2 tsp. salt
  • 2 tsp. black pepper
  • 1/2 cup tomato puree

For the Topping:
200 grams of bacon
250 grams of mozzarella cheese

Chicago-Style Deep Dish Pizza

Instructions

  1. For the tomato sauce, first put the butter in the saucepan and melt it.
  2. After finely chopping the onion and garlic, add them to the melted butter.
  3. Chop the tomatoes coarsely. When the color of the onion starts to change, add the tomatoes and tomato puree and stir.
  4. When the sauce starts bubbling, add the spices, stir for 1-2 more minutes, and remove from the stove.
  5. For the pizza dough, put all the ingredients listed for the dough (except olive oil and 20 grams of butter) in a mixing bowl and knead.
  6. Add flour little by little to get a smooth dough.
  7. Brush the dough with olive oil to make it ferment, and let it rest for 40 minutes.
  8. When the dough is fermented, place it on a floured kitchen counter and knead it with a rolling pin.
  9. Add the melted butter to the center of the dough and spread it well all around the edges.
  10. Fold the dough in half like an envelope and let it rest for about 20 more minutes.
  11. Meanwhile, set the oven to 180 degrees. Generously oil a high-border cake mold.
  12. Re-thin the dough with a rolling pin and place it in the cake mold.
  13. After cutting the excess edges with a knife, add the tomato sauce and spread it all over.
  14. Then add the grated mozzarella cheese and sliced bacon.
  15. Bake in a preheated oven for about 30–35 minutes in a controlled manner. Enjoy your meal.

  • For faster fermentation of the dough, use warm water.
  • Use a round mold to prevent the pizza from falling apart, and bake it properly.
