Supa Topcheta (Bulgarian Meatball Soup)

Ingredients

For meatballs:

  • 500 gr. minced meat
  • 1 egg
  • ½ cup breadcrumbs
  • 1 clove of garlic
  • 2 tablespoons grated onion
  • 1 tablespoon of finely chopped parsley
  • 1 teaspoon of sweet chili powder
  • Salt
  • Black Pepper
  • 2 tablespoons of flour

For the soup:

  • 2-3 tablespoons of olive oil
  • 1 onion, chopped
  • 3 stalks of celery, chopped
  • 3 carrots, peeled and diced
  • 3-4 potatoes, diced
  • Salt, black pepper
  • 2 liters of water 

For the soup sauce:

  • 2 egg yolks
  • 1 tablespoon of lemon juice
  • 150 g yogurt

Instructions

  1. Mix all the ingredients for the meatballs except the flour and shape them into meatballs.
  2. Sprinkle flour on a tray and coat the meatballs in flour.
  3. Heat oil in a pot and fry the meatballs in the oil. Set the fried meatballs aside.
  4. Heat the remaining oil in the same pot.
  5. Add the onion, celery stalks, potato, and carrot, and fry them in the oil. After adding the spices, add water and let it cook until the vegetables soften. Add the meatballs near the end of cooking.
  6. Whisk the egg, yogurt, and lemon juice in a bowl, then gradually add the soup broth and whisk.
  7. Serve by combining the mixtures.
