Ingredients

  • 600 grams of beef tenderloin
  • 15 shallots (or 2 onions)
  • 3 eggplants
  • 4 tomatoes
  • Vegetable oil
  • Black Pepper
  • Salt

Instructions

  1. Peel the eggplants and place them in salted water for 10 minutes.
  2. Then remove the eggplants from the water and dry them well with paper towels.
  3. Slice the dried eggplants horizontally. Put a small amount of oil in the pan.
  4. Fry the eggplants in this oil and place them on a baking sheet.
  5. Put the shallots in the same pan and sauté them.
  6. If you don't have shallots, slice the onion horizontally and fry it in the pan.
  7. Place the sauteed onions on the tray between the eggplants.
  8. Add a little oil to the pan and cook the tenderloins over high heat for 3–4 minutes.
  9. Wash the tomatoes well and pass them through a food processor.
  10. Pour the tomato puree you prepared over the tenderloin. Season with black pepper and salt.
  11. Put the meat on the tray. Bake in a preheated 180-degree oven until golden brown.
