Pizza al Taglio is a square slice of pizza with a crunchy, thick crust. The name al Taglio means "by the slice,"  which refers to the way the pizza is served. The pizza is baked in large, rectangular pizza pans and sold cut to the customer's specifications. A street delicacy, pizza al taglio, spread from Roman cuisine to Italy.

  1. In a large, deep bowl, mix the yeast with the warm water until dissolved.
  2. Add ⅓ of the flour and mix with your hands.
  3. Add the rest of the flour and mix; add the salt and extra virgin olive oil.
  4. Knead by hand for 10–12 minutes until it forms a smooth, firm ball, then transfer to a deep bowl and cover with plastic wrap.
  5. Leave to rest in the oven with the light on for 1 hour.
  6. Transfer the dough to a clean kitchen counter and fold it in half over itself three times. Transfer to the oiled bowl, cover tightly with plastic wrap, and set aside for an hour.
  7. Brush an 18x16-inch baking sheet with 1 tablespoon of olive oil. Carefully transfer the dough to the baking tray, then use your fingertips to press the dough to fit the tray.
  8. Leave the dough to rest for about an hour for the tray to ferment.
  9. For the pizza sauce, first peel and grate the tomatoes.
  10. Pass them through a food processor alongside the tomatoes, dried thyme, salt, and a little extra virgin olive oil.
  11. Set the oven to 260 degrees.
  12. Spread the tomato sauce evenly over the top of the pizza and around the edges with a baking brush. Bake the pizza for 10 minutes.
  13. Remove the pizza and add mozzarella cheese and other toppings.
  14. Bake the pizza for another 10 minutes until the cheese is melted and lightly colored.
  15. Let the pizza cool for 10–20 minutes before cutting into rectangles. Bon Appetit!

  Expert Tips
  • If you want to cook Pizza al Taglio in the best way, you should cook the pizza in two steps: First, add only the sauce to the pizza and bake in the oven at 260 degrees for 10 minutes, then take it out and add the rest of the toppings to the pizza and bake at 260 degrees for another 10 minutes.
  • If you add the toppings in the middle of the cooking process, they won't overcook or burn, so don't add them at the very beginning.
  • The more you fold the pizza dough and let it rest, the better the dough will be.
  • If you want the dough to ferment faster, you can put it in a closed oven and let it rest with the oven light on.
