Okonomiyaki, a Japanese pancake, is one of the street foods you can see on almost every block in Japan. Especially popular in Kansai and Hiroshima, this dish is very popular throughout the country. However, the size and ingredients vary from one region to another. If the ingredients are ready, this time we are ready for the okonomiyaki recipe, one of the favorite flavors of Japanese cuisine.

  1. Mix the barbecue sauce ingredients in a bowl and refrigerate for 10 minutes.
  2. Mix the mayonnaise sauce ingredients in a bowl and refrigerate for 10 minutes.
  3. For the batter, put the flour in a large bowl. Make a pool in the center, and add salt.
  4. Then add milk, water, and eggs to the pool and whisk. Continue whisking until the okonomiyaki mixture becomes smooth. When it thickens, let it rest in the refrigerator for 15 minutes.
  5. Finely chop the cabbage and spring onion. Grate the carrot and squeeze the extra water with your hands.
  6. Add the chopped vegetables to the mixture and mix. Add 1 tablespoon of vegetable oil to a skillet and spread the oil throughout the pan with the help of a brush.
  7. When the pan is hot, place the okonomiyaki mixture in the pan so that it is 1 cm thick and smooth the edges.
  8. Cook over low heat, like a classic pancake. After the bottom is cooked, place the dried meat on top and turn it over.
  9. Cover the pan and cook over low heat for 3–4 minutes.
  10. When the okonomiyaki is fully cooked, place it on a serving plate. Serve with barbecue sauce and mayonnaise sauce. Enjoy your meal.
  Serving Suggestions

You can serve okonomiyaki with pickled ginger (gari).

  Expert Tips
  • You can use a mixer or blender to get a smooth consistency.
  • Do not add the mixture before the skillet is completely heated.
  • Be controlled during cooking, and make sure that the stove is on low heat. Please note that otherwise it may overcook and taste burnt.
