  1. After washing the eggplants, peel them and cut them into small cubes. Put the rice in another bowl.
  2. Add enough hot water and salt to cover the rice and let it stand for 10 minutes, then wash it in cold water several times and let it drain. Take the eggplants out of the salted water, squeeze them lightly to remove the water, and dry them with paper towels. Put the olive oil in a skillet and heat it.
  3. Add the eggplants, cut into cubes, and fry them. Drain its oil by taking it on a paper towel. Put olive oil in a pot and heat it. Add the grated onions and roast until they turn pink. Add the grated tomatoes to the onions and continue roasting. Add water, 2 teaspoons salt, 2 teaspoons sugar, 1 teaspoon black pepper, 2 teaspoons allspice, 2 teaspoons mint, and 1 teaspoon cinnamon.
