  1. Place the potato starch noodles in a bowl. Pour hot water over them and soak for 30 minutes to soften.
  2. Then drain and cut the noodles in half.
  3. To prepare the sauce, add soy sauce, mirin, and brown sugar to a bowl and mix.
  4. Take 2 tablespoons of the mixture and pour it over the thinly sliced meat. Set aside for the meat to marinate.
  5. Add half a cup of water to the remaining sauce mixture and set aside.
  6. Heat 1 tablespoon of sesame oil in a wok pan. Add garlic to the pan and sauté for 1 minute. Then add the meat, sauté for 2 minutes, and transfer to another bowl.
  7. Add the remaining sesame oil to the wok. Add the sliced onions and carrots to the wok. Add mushrooms and yellow peppers and continue sautéing. Sauté all ingredients for 3–5 minutes.
  8. Then add the noodles, spinach, and sauce mixture to the wok, respectively.
  9. Cook over high heat while stirring until all the sauce is absorbed.
  10. Add the cooked meat, stir, and serve.
