  1. Firstly, separate the bones and meat and put the meat in a pot.
  2. Cut the celery stalk, carrot, and onion into quarters and add them to the pot.
  3. Add black pepper, salt, and herbs.
  4. Then add 3 liters of water and bring to a boil.
  5. When the water starts to boil, turn the heat down and cook for 2 hours with the lid open.
  6. At the end of this process, thaw the broth and remove the vegetables and bones.
  7. Put the water back into the pot and boil until it reaches 1.5 liters.
  8. Chop the meat into large pieces.
  9. Chop the potatoes and meat to the same size. Make sure that it is not too small.
  10. Cut the carrot and onion into round pieces.
  11. Put the meat in a different pot. Add broth to it. Wait until it boils.
  12. Lower the heat and add onions and carrots.
  13. After cooking for 10 minutes, add the chopped potatoes and thyme.
  14. Cook for another 15 minutes to soften the meat.
  15. Take the cooked meat off the stove and leave it to rest for 15 minutes with its lid closed.
