A specialty of Italian cuisine, gnocchi is a dish whose main ingredients are potatoes, flour, and eggs. It is optionally enriched with vegetables, dry prunes, or sauces.   1. Boil the potatoes in plenty of water, peel them, and mash them until you get a smooth consistency.
  2. Create a hole in the center of the potatoes and sprinkle a little flour on it.
  3. Add the egg, salt, and remaining flour; mix with a spatula from the edges towards the center.
  4. When all the ingredients are well combined, knead the dough by hand for 4-5 minutes. Divide the dough into two meringues.
  5. Roll out the first meringue into a 2 cm-thick roll. Cut 2 cm-wide pieces with the help of a knife.
  6. Repeat the same process for the second meringue. Boil the gnocchi in 2 liters of boiling water and place them in a large baking dish.
  7. For the sauce, sauté the chopped red onion in olive oil for 5 minutes.
  8. Add crushed garlic, diced tomatoes, thyme, grated lemon peel, granulated sugar, salt, and pepper, and mix.
  9. When the tomatoes start to soften, add the finely chopped spinach, cook for 1-2 more minutes, and remove from the stove.
  10. Pour the sauce over the gnocchi into the baking dish and mix gently without crushing.
  11. Sprinkle the finely chopped mozzarella cheese on top and bake in a preheated 200-degree oven for 10–15 minutes, or until the mozzarella cheese melts and turns golden brown. Serve hot. Enjoy your meal.
