Peel the garlic cloves and crush them. Add 1 tablespoon of olive oil.
Add anchovies, lemon juice, mustard, black pepper, and eggs and mash in a food processor. Mix until you get a puree consistency. Let the sauce stand for half an hour.
Wash the lettuce leaves with plenty of water, drain them, and tear them into large pieces with your hands. Remove the crust from the bread slices and cut the inside into cubes.
Heat 2 tablespoons of olive oil in a skillet. Add the bread and sauté, stirring constantly, until it gets crunchy. Put the bread on a paper towel and drain the oil.
Cut the chicken meat into thin strips. Put the remaining 1 tablespoon of olive oil in another pan and sauté the meat with sesame seeds.
Combine all the salad ingredients and the chicken meat in a large salad bowl. Drizzle the sauce over it. Sprinkle the Parmesan cheese and serve.
