  1. Peel and dice the tomatoes. Peel and crush the garlic.
  2. Heat 2 tablespoons of oil in a pan and add half of the garlic and tomatoes. Roast for 4-5 minutes by stirring.
  3. Mix the remaining oil and garlic in a bowl. Toast the bread on both sides and then spread garlic oil on it.
  4. Spread the tomato sauce on the bread. Garnish with chopped parsley and fresh thyme sprigs, and serve.
