  1. Finely chop the onion and put it in a saucepan.
  2. Add the vinegar and wine and boil for a while.
  3. Strain the mixture through a strainer, put the vinegar-wine mixture into a deep bowl, and let it cool.
  4. After the mixture you boiled has cooled down, add salt and egg yolks and whisk.
  5. Put the bowl you prepared in a tray full of water and melt it in a bain-marie.
  6. Continue whisking in the meantime. Add the butter little by little to the mixture.
  7. Add finely chopped parsley and mix. Serve with meat, chicken, and fish dishes. Bon appetit!
