  1. First, wash the chicken thighs thoroughly and boil them in 1 and a half liters of water for 45 minutes.
  2. Then remove the thighs, separate them from the bones, and drain the water.
  3. Meanwhile, cut the onions into cubes. Put olive oil in the pan, and fry the onions in this oil.
  4. Add the diced potatoes, celery, and carrots, and fry for a few more minutes.
  5. Put the chicken-boiled water back into the pot and boil for 7 minutes.
  6. Throw the shredded chicken into this water with the rice and cook for another 15 minutes.
  7. For the sauce, put the egg yolks in a bowl, whisk them, add lemon juice, and whisk well.
  8. Slowly pour a ladle of chicken broth into the egg mixture. When the sauce gets hot, pour it slowly into the pot. Do not stop stirring during this process.
  9. After boiling for a few more minutes, you can serve it by sprinkling chopped dill on it. Enjoy your meal.
