Baba Ganoush

Ingredients

  • 1.5 kg long and thin eggplants
  • Juice of half a lemon
  • 250 g of banana chili
  • 300 g condensed yoghurt
  • 4 cloves of garlic
  • Half a bunch of parsley
  • 100 g butter
  • 1 teaspoon flaked red pepper
  • 3 tomatoes
  • Salt

Instructions

  1. Roast the eggplants, tomatoes, and banana chilies. When they cool down, peel the eggplants and slice them finely.
  2. Put the lemon juice and salt in a glass bowl and mix. Add the roasted eggplants and mix with a wooden spoon.
  3. Dice the tomatoes and peppers and add them to the eggplants. Peel and mash the garlic cloves.
  4. Put the yogurt in a bowl, add the garlic and mix. Add the yogurt and garlic to the eggplant mixture, and mix gently with a wooden spoon.
  5. Clean and finely chop the parsley. Put the butter in a pan and melt it; add the red pepper flakes and roast. Place the eggplant mixture with yogurt on a serving plate.
  6. Pour the fried red pepper flakes over it. Garnish with chopped parsley. Enjoy your meal!
